Head chef plating a refined dish in the ADSIGHT LTD kitchen

Head Chef

Eleanor Whitfield

Coastal New Zealand produce, precise technique, and a quiet confidence that carries from the kitchen to the casino lounge.

The Chef

A coastal story, told through the plate

Eleanor Whitfield grew up in the Bay of Islands, where family meals revolved around whatever the boats brought in that morning. Her grandmother taught her to respect the fish, the tides, and the seasons long before any culinary school did. After moving to Auckland for an apprenticeship, she spent nearly a decade in some of the country's most demanding kitchens, learning to pair that instinctive coastal knowledge with disciplined technique.

Her philosophy is simple: find the best local ingredient, understand what it needs, and then get out of its way. At ADSIGHT LTD, that means a menu that changes with the weather, the harvest, and the catch. It also means a kitchen that treats every plate as a conversation with the guest, whether they are seated in the dining room or pausing between hands at the poker tables in the casino lounge.

Signature Dishes

Three plates that define the kitchen

Cloudy Bay Clams, Kawakawa & Burnt Lemon

Steamed clams in a coastal broth with kawakawa oil and charred lemon. Inspired by early morning beach walks and the smell of salt on warm sand.

Mānuka-Smoked Ora King Salmon

Slow-smoked salmon with pickled fennel, cucumber, and a horseradish cream. A dish built on patience and the quiet heat of native timber.

Canterbury Lamb, Native Pepper & Beetroot

Rested lamb loin with horopito spice, roasted beetroot, and a rich jus. A tribute to the South Island high country and its deep, earthy flavours.

Casino Lounge Collaboration

One kitchen, two rooms, the same standard

The casino lounge is not an afterthought; it is an extension of the dining room. Eleanor and the lounge team developed a menu that works in both spaces: small plates that can be eaten without leaving the table, composed dishes that hold their temperature between hands, and a few indulgent items designed for poker nights and long conversations. The same care that goes into a tasting menu goes into every chip bowl and every plate carried past the roulette wheel.

The casino lounge is an extension of our dining room—same care, same precision, same warmth.

Kitchen Philosophy in Practice

How the philosophy becomes a plate

Sourcing & Seasonality

Eleanor works directly with small farms, fishers, and foragers across the upper North Island. The menu changes every few weeks, not because it needs novelty, but because the best ingredients arrive on their own schedule. If the snapper is not right, it is not on the menu.

Team & Training

Every cook in the kitchen learns the same foundation: taste, season, adjust, repeat. Eleanor runs regular technique sessions and encourages the team to bring their own ideas to the pass. The result is a kitchen that is calm, focused, and quietly confident.

Guest Experience

Before any dish leaves the kitchen, it is checked against the standard set at the start of service. Eleanor also listens to the front-of-house team, who know when a guest wants a lighter plate or a richer finish. That feedback loop keeps the menu responsive without losing its identity.

Chef's Table Experience

A seat at the pass

For a more personal evening, the chef's table places a small group directly beside the kitchen. Guests watch the rhythm of service up close, hear the calls from the pass, and enjoy a multi-course tasting menu with Eleanor explaining each dish as it arrives. It is available on select evenings and is often paired with a visit to the casino lounge afterward.
